Description: A Singaporean staple, roti prata is an Indian flatbread that's moist and chewy on the inside but flaky and crispy on the outside, served with an accompanying dish of spicy curry. While there are many stalls in Singapore claiming to be "famous" or "the best", this eatery really does deliver, and is well worth the drive out of town. Description: This Indian Muslim eatery across the road from the Sultan Mosque serves up fragrant, delicious food guaranteed to get your tastebuds singing. For a snack – in the loosest sense of the word, because everything here comes in exceedingly generous portions – try the murtabak, a pancake stuffed with mutton, diced onions and egg, which you dip into an accompanying curry sauce. Zam Zam is, however, most famous for its biryani, succulent chunks of chicken or mutton in an intensely spicy sauce paired with saffron-flavored rice.

Description: Samy's is a much respected southern Indian banana leaf restaurant. As soon as you're seated, a large green banana leaf will be placed on the table before you. This is your plate, and a mound of rice will be spooned directly onto it. Then the buckets of curry start arriving. Take your pick from vegetables, chicken, mutton, fish, prawns and various combinations thereof. The fish head curry is among the best in town. Try to get a table on the verandah – it's breezier and more attractive. The open air dining hall is located in a civil service club, and non-members must pay a nominal admission fee – more than worth it for food this good.
